Count your cups before you choose a machine
Under 100 cups a day, a one-group machine is enough. Above that, a single group becomes the bottleneck at peak hours and you will need to replace the machine early.
The grinder matters as much as the machine
A good machine with a poor grinder still makes poor coffee: an uneven grind makes the water flow unevenly. Many new cafés spend the whole budget on the machine and then buy the cheapest grinder — that is the wrong way round.
Power and water
Two-group machines usually need a high-capacity power supply and a dedicated water line. Check your premises before you order the machine, not after.
